The sugar industry is the largest agro-based industry in India. The sugar industry is very
important in the Indian economy. India ranks second in the world in sugar production. As
well as consumers and sugar based industries are now increasing the consumption of sugar
instead of jaggery so the importance of sugar based research is increasing. There are a total
of 6 sugar factories in India out of which there are 4 co-operative sugar factories. The
production capacity of these factories is 170 lakh metric tons. Factories are distributed in 18
states of India. About 60% of which are cooperative sugar factories. There are a total of 9
sugar factories operating in Surat district. And all those sugar factories operate on a
cooperative basis. Also, the sugar factory located in Bardoli area of Surat district is
functioning as the largest sugar producing sugar factory in Asia. As well as getting adequate
price of sugarcane, the people involved in the sugar industry have become financially
